Sparkling Mondeuse
Appellation: Santa Barbara County, California
This wine is red raspberry meets strawberry jolly rancher meets 10am sips meets summertime. She's edgy, a bit wild, and perfect for pizza on a sunny day. The bubbles are delicate, and the wine is dry with a good amount of acid. Juice factor 1000. Serve chilled or room temperature—it will all work for this fun wine.
Farming: This wine comes from a certified organic and dry farmed vineyard in Foxen Canyon, one of the only places in Santa Barbara County that can be consistently dry farmed.
Winemaking: Fermented natively on skins for about 10 days, with no added sulfur. Aged in neutral oak for a year, then bottled before fermentation finished, allowing the second fermentation in bottle (pét‑nat style). Bottled under zero‑dosage, minimal intervention, and manually disgorged by hand.
